Those wines that bind their origin to a fungus, the Botrytis Cinerea, able to attack and metabolize the skin of the berries are called botrytized wines. Under normal circumstances this grey mould would also affect the pulp by making the berry explod; to become ?Noble? the botrytis requires an alternation of moisture and sun, a situation that occurs only in areas well defined and doesn't develop all the years completely. The grapes must be perfectly ripe to take advantage of the the attack of mould,to enrich and improve the concentrations usefull to get the considerable peculiar organoleptic changes; only in this way the "over ripening" induced by nature can become helpful.
The harvest must be manual of course and done of successive sortings, because the mould does not expand in a homogeneous and uniform way.
"Mufis dal siet", named the "mould" of 2007, is a meditation wine made from friuņano grapes (70%), picolit (25%) and muscat grapes (5%).
Thanks to the particular climatic conditions of the autumn of 2007 the berries were totally damaged by the botrytis cinerea, the attack of the mould was done entirely on the plants and for the picolit during the withering.
